Join us for a happy hour cooking class, making yummy Pad Thai
6 p.m. Wednesday, August 5 via zoom.
Dana Terhune, good friend and sorority sister of Stephanie Wilson, has done virtual cooking classes for friends, and she's going to lead a Portlandia cooking class on June 5. Here's how it will work:
Those who wish will purchase ingredients for the pad thai recipe (below) ahead of time, and make pad thai while following along with Dana's steps. Then, enjoy the results.
Zoom call details will be sent out Tuesday, August 4 to everyone who normally receives weekly Portlandia emails. Questions and comments during the lesson will help ensure success for all!
If you prefer to just watch the class, grab a happy hour beverage and make the recipe another time. That's ok, too!
Here are the ingredients you need to have on hand:
This recipe serves 4.
Choice of protein: shrimp or tofu
2 Tbsp tamarind paste (second choice tamarind concentrate, third choice 6T lime juice - this is a tasty option.)
3 Tbsp fish sauce
1 Tbsp dried shrimp (optional)
3 Tbsp sugar
4 Tbsp vegetable oil
1 Tbsp rice vinegar
3/4 tsp cayenne pepper
8 ounces 1/4” wide dried flat rice noodles
12 oz medium shrimp (40—50/pound) or 4 ounces extra-firm or pressed tofu
3C bean sprouts
5 scallions/green onions
1/4 C fresh cilantro leaves (optional)
1 med shallot
3 garlic cloves
2 large eggs
1/4 C unsalted roasted peanuts plus extra for garnish
